  1. Bring a large saucepan of water to boil then add 1 large cauliflower broken into pieces and cook for 5 minutes
  2. Drain the cauliflower then tip into a ovenprof dish,heat oven to 220°c
  3. Put the saucepan back on the heat and add 500 ml milk,4tbsp flour and 50g butter
  4. Keep whisking fast as the butter melts and the mixture come to the boil. The flour will be disappear and the sauce will begin to thicken. Whisk for 2 minutes while the sauce bubbles and become nice and thick
  5. Turn off the heat,stir in most of the 100g grated cheddar cheese and pour over the cauliflower. Scatter the remaining cheese and 2-4 tbsp bread crumbs (if using)
  6. Put in the oven and bake for 20 minutes until bubbling
  7. Enjoy

When cauliflower is cool enough to handle, wrap in a clean kitchen towel and squeeze dry. Meanwhile, in another bowl, mix cheeses together. Stir half of cheese mixture into cauliflower, reserving remainder. Separate the cauliflower into small florets. Cauliflower Cheese I think a dish like this could have endless variations.
