- melt the butter in a pan and add the flour. mix until combined to make a roux. keep moving about the pan for a few minutes. add a splash of milk at a time and stir thoroughly until completely combined. repeat until all milk is used up
- Bring to the boil constantly stirring. It will start to thicken. take off the heat and add half the cheese. stir until melted
- put the florets into a casserole dish so there is an even layer. pour over the sauce to cover the florets and sprinkle with the rest of the cheese. place under a grill or in the oven until the cheese has melted with a bit of colour
Sprinkle a little paprika on the cheese, then repeat with another layer of broccoli, sauce, and cheese. End with a sprinkling of breadcrumbs. Bring a large pot of water to a boil over medium heat. Salt the water and add the broccoli and cauliflower florets.
